Cook a delicious restaurant style Butter Chicken feast for 6 from scratch

The Butter Chicken story

Butter Chicken was first invented over 70 years ago in an Old Delhi restaurant called Moti Mahal. The restaurant was famous for it's Tandoori Chicken - whole chicken marinated with spices and grilled in a very hot clay oven.

When certain cuts of the whole chicken didn't move fast enough, the chefs came up with a creamy spiced tomato sauce. They popped pieces of Tandoori Chicken into the sauce and called the dish 'Butter Chicken'. The rest as they say is history.

At Spicecraft we followed Butter Chicken right to it's source.

After sampling a lot of Butter Chicken at Moti Mahal and discreet chats with their chefs, we worked out a recipe that captures the flavoursome essence of the original dish while keeping it simple to make.

Inside the Kit: Butter Chicken Spices

The kit comes with 13 herbs and spices pre-mixed into 4 separate sachets. As different spices cook differently, each sachet goes in at different stages so you build layers of complex flavour as you cook.

We use only the finest spices from around the world. The spices are roasted, ground, blended and packed right here in Sydney to ensure maximum quality and freshness.

No artificial flavours, colours or preservatives. Everything in the kit is gluten and nut free.

Vegan or vegetarian? Check out this recipe for a delicious version with roasted cauliflower and Paneer.

Inside the Kit: Saffron Rice

Butter Chicken and Saffron Rice are a match made in heaven.

The kit comes with a bag of aged long grain Basmati rice and a small pod of grade 1 Persian saffron.

Steep the saffron in warm water for 15-20 mins until the water turns golden yellow, the use it for cooking the rice.

We recommend using the absorption method for cooking the rice but you can always use a rice cooker.

Inside the Kit: Mango Rose Lassi

Finally some refreshing Mango Rose Lassi to round off the meal.

The lassi mix is made with organic edible rose dust and spiced cardamom sugar.

Just add a scoop of this mix to some yogurt and a fruit of your choice and blend for 30 seconds for a delicious drink.

Traditionally lassi is made with ripe mangoes, but it works just as well with blueberries, strawberries or even plain.

Inside the Kit: Recipe Booklet

Finally the recipe booklet to bring it all together. It comes with easy colour coded steps so you can’t go wrong.

There’s a shopping list for fresh ingredients that you’ll need – chicken, cream, tomato paste, honey and yogurt.

Read stories and cooking tips along the way, plus vegan and vegetarian variations so you can make this meal your own.

Follow along at your own pace, get the kids and guests involved to make this a cooking and eating experience to remember.

It does take a bit of time to cook the entire meal but hope you’ll find the results worth the effort.

Cooking Tips

Not cooking for 6? This Butter Chicken is great for freezing. The cooked Butter Chicken will keep for upto 3 months in the freezer or 2 days in the fridge. In fact leftovers taste even better the next day as the flavours get a chance to develop.

Making it milder

Prefer it milder? Cook the Butter Chicken as per the original recipe, then add in a few dollops of cream or plain yogurt just before serving. This lets you adjust the heat level to individual tastes. Do not use yogurt if you wish to reheat it later.

Flavour and consistency

If the sauce looks a bit runny, cook uncovered for another 10-15 mins after adding the cooked chicken. You want thick a saucy consistency. For best results, use light thickened cream; the fat in full cream will dull the flavour of spices.

We purchased the Gourmet Butter Chicken Meal Kit and Naan Bread mix from the Easter Show. The staff here were so beautiful and friendly and took the time to explain the different kits and benefits of each.
I never thought that we could produce a restaurant quality meal but we did with this kit!!
The Naan Bread mix was also easy to use, and tasted just like store bought.
The whole thing is really easy to follow and gave us the confidence to prepare a delicious and special mother’s day meal.
