Biryani is a much loved Indian dish made for special occasions by steam-cooking layers of meat/veg and rice in their own juices. There are many ways to make a Biryani, this particular recipe comes from the historic city of Hyderabad in Southern India.

Any Biryani lover will tell you the perfect Biryani can take up to 24 hours to put together. But this kit is packed with clever tips and tricks to help you cook a sensational flavour packed dish in under 90 minutes (plus marinading time).

Vegetable Biryani - fluffy basmati rice infused with aromatic spices, layered with hearty spiced vegetables like potatoes, peas, carrots and paneer. Full recipe inside.

How to cook

1. Marinate meat in Marinade Spices, yogurt and fresh herbs for an hour 

2. Parboil rice with Rice Spice Blend

3. Layer meat and rice with mint, coriander and fried onions

4. Seal pot and cook in the oven for 40 mins  

Just Add

1 kg lamb or chicken, 400g Basmati Rice, 1 cup plain Greek yogurt, 1 bunch fresh coriander leaves, 1 bunch fresh mint leaves, 4 tbsp cooking oil, 1 medium lemon, 2 tbsp ghee or butter.

Cooking Tips

Make the most of your kits

  1. A pinch of saffron can add some extra oomph to your Biryani. Steep saffron strands in 2 tbsp warm milk for an hour. Sprinkle it over the rice when adding the melted butter to layer 2. 
  2. Serve with a refreshing Raita on the side. Combine 2 cups of plain yogurt with finely chopped onion and cucumber, 1 tbsp sugar, 1 tsp salt and a big squeeze of lemon
